Peach Protein Parfait

These delicious blended fruit cups can be served fresh or frozen as part of your breakfast, as a snack or as a dessert. The secret ingredient is cottage cheese, which makes this treat extra creamy and adds a protein punch! Cottage cheese has been dubbed “the comeback curd”, finding its way back into refrigerators everywhere to be used in smoothies, desserts and recipes like this one and Sausage and Cheese Breakfast Muffins (another crowd favorite).

The Greek yogurt and cottage cheese in this recipe pack 16 grams of protein into one serving. The fresh peaches and touch of honey add just the right amount of sweetness and summer freshness to the treat. And the nuts provide healthy fat and crunch.  These parfait cups are sure to be a hit with your family–if you don’t eat them all up first!

Peach Protein Parfait

Yield: 4 servings

Ingredients:

  • 2 cups cottage cheese
  • 1 1/2  cups Greek yogurt   
  • 2 cups diced ripe peaches  (1 cup reserved)
  • 2 teaspoons honey
  • 1/3 cup slivered almonds

Instructions:

1. Put the cottage cheese, yogurt, 1 cup of peaches and the honey into a food processor and blend until smooth.

2. Distribute half of the mixture into 4 single-serve containers.  Add the other 1 cup of diced peaches across the 4 containers.  Top with the remaining cottage cheese/yogurt mixture and slivered almonds. 

3. Cover and freeze.  Or put in the refrigerator, depending on the consistency you like best. 

Note: To serve from the freezer, thaw for 20 minutes or put in the microwave for 20 seconds. 

Ingredient substitute: Use strawberries instead of peaches and top with mini dark chocolate chips.
