It’s as if a muffin and a soufflé had a baby! You get an all-in-one super healthy breakfast that you’re sure to love. These muffins can be eaten warm out of the oven or stored in the fridge and reheated in the microwave. Sausage & Cheese Breakfast Muffins
Yield: Makes 6 large muffins.
Ingredients
- 3/4 cups diced cooked chicken sausage
- 3/4 cup grated sharp cheddar cheese
- 1/2 cup sliced green onions
- 2/3 cups full-fat cottage cheese
- 1/3 cup grated Parmesan
- 1/4 cup all-purpose flour
- 2/3 cup almond flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 eggs, beaten
- 3 tablespoons water

Instructions
- Preheat oven to 400°F. Spray large silicone baking cups with olive oil/non-stick spray.
- In a blender, combine cottage cheese, Parmesan, both flours, baking powder, salt, eggs, and water.
- Mix until well combined.
- In the bottom of each muffin tin, sprinkle sausage, cheese, and green onions.
- Pour batter into the six muffin cups.
- Bake for 30 minutes or until lightly browned on top and set in the center.
- Let cool for 10 minutes and service warm or store in the refrigerator and reheat in the microwave for 30 seconds.

Notes: These muffins are best baked in a non-stick muffin pan that contains six large muffin cups. You can make 12 regular-sized muffins, just decrease the cook time.
